WThis is an easy take on a beverage from our latest menu. Designed as a party-sized prepared mix that's packed full of flavours of the Christmas time, which makes it excellent for a celebration. Reserve the remaining cordial you can use for morning drinks, sweets, or for another batch of bikinis.
Bikini
Yields 10 guests
For the Clementine Cordial (produces 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g fine sugar
For the Drink (makes 850ml, serving 10)
400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
Whole cranberries, to garnish
Mandarin essential oil, to finish
Instructions
Making the Syrup: Put all the ingredients inside a saucepan, heat until it reaches a gentle boil, stirring until the sugar dissolves. Next, turn off the burner allowing it to cool down entirely. Pour into an sealable bottle, cap it and refrigerate it in the refrigerator, it can be stored for about one month.
To make Batch Mix: Combine all the spirits and syrup into one sizeable container, let it rest for 60 minutes, then pass it through best through a fine cloth, making it perfectly clear.
To serve: Measure 85ml of your premix into a mixing glass filled with ice, and stir gently for one minute to cool it down. Strain to a chilled martini glass or a similar vessel, top with a few cranberries adding the final touch using a quick spritz of mandarin oil over the top.
